Smażone chayote z kurczakiem i krewetkami

Kolejne filipińskie danie znane jako ginisang sayote. W poprzednim wpisie było to chayote z wieprzowiną i pomidorami, dzisiaj z kurczakiem i krewetkami. Napiszę ponownie, jeśli ktoś nie czytał poprzedniego wpisu, że tajemnicą dobrego smaku tego dania jest mocny, domowy rosół. Nie warto go zastępować wywarem warzywnym, bo danie straci cały swój urok. Chyba, że ktoś dysponuje wywarem z krewetek. Ja zawsze zbieram w zamrażarce skorupki z krewetek i kiedy jest taka potrzeba gotuje z nich wywar. Krewetki kupuję zawsze surowe, te szare. Różowe są już wcześniej obgotowane i ich skorupki na niewiele się zdadzą a i gotowanie ich po raz drugi może spowodować ich guzowatość.
W przypadku braku rosołu lepiej wybrać inne danie.
Smażone chayote z kurczakiem i krewetkami

3 łyżki oleju,
1 średnia cebula, pokrojona na cienkie plasterki,
5 ząbków czosnku, zmiażdżonych,
170 g piersi z kurczaka, pokrojonej na cienkie plasterki,
2 szklanki mocnego, domowego rosołu z kury lub krewetek,
1 duże chayote (kolczoch jadalny lub mały kabaczek, wielkości ogórka a najlepiej młody patison, pokrojony na ćwierćplasterki,
8-10 krewetek,
sól i pieprz.
Rozgrzać olej w głębokiej patelni. Wrzucić cebulę a kiedy będzie miękka dodać kurczaka i czosnek. Smażyć 3 minuty.
Wlać 1 szklankę rosołu, zagotować i przykryć. Gotować przez15 minut. Po tym czasie płyn powinien się zredukować więcej niż o połowę. Dodać chayote lub kabaczki albo patisony i gotować przez 3-4 minuty.
Wlać pozostały rosół, dodać krewetki i gotować 2-3 minuty. Doprawić do smaku solą i pieprzem koniecznie świeżo mielonym.
