Pieczona marchewka z fetÄ… i granatem

To danie to absolutne mistrzostwo świata! Idealne połączenie smaków: słodkiego, słonego i kwaśnego podkreślone świeżością mięty i orzeźwiające od pomarańczy. Dzięki ciecierzycy również treściwe. To kolejne danie, które idealnie sprawdzi się w lunchboxie.
Nie wiem, co mam jeszcze napisać, żeby zachęcić Was do spróbowania, ale dawno nie jadłam czegoś tak wspaniałego.
Podałam z pełnoziarnistymi chlebkami pita posmarowanymi oliwą, posypanymi zaatharem i podpieczonymi w piekarniku.
Pieczona marchewka z fetÄ… i granatem

750g marchewki, pokrojonej w słupki,
2 łyżki oliwy,
2 łyżeczki kuminu,
sól,
sok oraz skórka starta z 1 pomarańczy,
1 puszka ciecierzycy, odcedzonej i przepłukanej, (u mnie samodzielnie namoczona i ugotowana),
100g fety,
mały pęczek mięty, grubo pokrojony,
75g nasion granatu (u mnie nasiona z połowy ogromnego),
chlebki pita do podania.
Nagrzać piekarnik do 200C. Skropić marchewkę 1 łyżka oliwy, posypać kuminem, posolić i piec na blaszce wyłożonej papierem do pieczenia ok. 50 min. Marchewkę trzeba parę razy wymieszać w trakcie pieczenia, żeby się nie przypaliła.
Upieczoną marchewkę wymieszać z ciecierzycą, posypać skórką z pomarańczy, rozdrobnionym serem, miętą i granatem. Całość skropić pozostałym olejem i odrobiną soku z pomarańczy, wymieszać.
Podawać z ciepłymi chlebkami pita.
