Gulasz z soczewicy

Bardzo smaczny gulasz w wersji wegetariańskiej, który możemy również przystosować dla mięsożerców. Wystarczy dodać do niego trochę kiełbasy lub boczku. Można też się pokusić o dodatek do niego innych, sezonowych warzyw i ziemniaków.

1,5 szklanki ugotowanej soczewicy puy lub zielonej,
2 łyżki oleju,
1 cebula, posiekana,
3 zÄ…bki czosnku, posiekane,
1 czerwona papryka, pokrojona w kostkÄ™,
2 Å‚odygi selera naciowego, posiekane,
1 liść laurowy,
1 puszka pomidorów,
1 łyżka węgierskiej pasty paprykowej lub 2 łyżeczki papryki, może być w dowolnej proporcji słodka i ostra,
sól, pieprz,
natka pietruszki do posypania.
W głębokiej patelni rozgrzać olej. Wrzucić cebulę i smażyć 2-3 minuty. Dodać paprykę oraz seler. Kontynuować smażenie, aż cebula lekko się zezłoci. Dodać czosnek i smażyć jeszcze 2 minuty. Dodać pastę paprykową lub paprykę w proszku, smażyć pół minuty. Dodać pomidory, liść laurowy oraz pół szklanki wody. Gotować do momentu, kiedy papryka będzie miękka. Dodać soczewicę i gotować wszystko razem jeszcze przez 3-4 minuty. Doprawić całość solą i pieprzem do smaku. Podawać posypany posiekana natką z pietruszki.
