ÅosoÅ› zapiekany ze szparagami i pomidorkami

Brak pomysłu na obiad i mało czasu? To danie jest stworzone do tego, żeby zjeść szybko, zdrowo i smacznie a na dodatek wykorzystać kończący się sezon szparagowy. Danie jest praktycznie gotowe po 20 minutach od momentu wejścia do kuchni. Zaczynamy od nastawienia piekarnika a w tym czasie układamy w naczyniu do zapiekania wszystkie składniki dania. Zajmie to nie więcej niż 5 minut. Po wstawieniu dania do piekarnika można nakryć stół, otworzyć wino i zaprosić rodzinę do stołu.

z podanej ilości wychodzi 2 porcje
2 kawałki filetów z łososia,
parę plasterków proscuiutto (szynki parmeńskiej), porwanego w dłoniach na kawałki,
1 pęczek zielonych szparagów z odłamanymi zdrewniałymi końcówkami,
1/2 cytryny, pokrojonej na kawałki
garść bardzo dojrzałych i słodkich pomidorków koktajlowych, przekrojonych na pół,
oliwa,
sól i pieprz,
świeże zioła wg. uznania (u mnie tymianek).
Nagrzać piekarnik do 180C.Wyłożyć blachę papierem do pieczenia lub użyć naczynia żaroodpornego. Ułożyć w naczyniu szparagi, polać odrobiną oliwy i wymieszać, żeby całe się nią pokryły. Na szparagach ułożyć łososia, pomidory, kawałki cytryny i kawałki proscuiutto, Posolić, popieprzyć, skropić oliwą i posypać ziołami. Włożyć do piekarnika i zapiekać około 15 minut, aż szparagi będą miękkie, ale nadal lekko chrupiące a ryba upieczona, ale niewysuszona.
